What types of cheese does Olive Garden Use?
For this recipe, Olive Garden uses a blend of Fontinella cheese and mozzarella cheese.
While mozzarella cheese is a well known cheese, Fontinella is not. Fontinella cheese is a sweet and creamy cheese that melts wonderfully. Which makes it the best cheese to partner with mozzarella cheese and make the perfect sauce less yet creamy pizza.

How Does this Sauce Less Pizza Work?

I have tried many different ways to reheat leftover pizza since pizza is a staple dinner recipe. While I definitely do not recommend the microwave to reheat your pizza it will work in a pinch. The downside is your pizza will likely be soggy.
Reheating the pizza in the oven does work well to provide a crispy crust as opposed to a soggy crust when microwaved. However, preheating your oven and reheating the pizza in the oven can take quite a bit of time. Make sure to have at least 20-30 minutes to reheat your pizza.
If you are looking for the best and fastest way to reheat your pizza I would use an airfryer! I know everyone is using the airfryer to cook everything these days, but it truly is the best option.
You can pop a slice or two of pizza in the air fryer basket and set it to 380 degrees for 2 minutes and you will get the perfectly heated, crispy pizza in under 10 minutes.

- Onion
- Tomatoes
- Garlic
- Salt
- Dried basil
- Shredded Fontinella cheese

How to Make Olive Garden Chicken Formaggio Pizza
- Sauté or bake chicken breast until done.
- Cool chicken to room temperature.
- Cut chicken into thin strips.
- Place tomatoes, garlic, salt, and basil in a bowl. Stir to combine.
- Sauté onions and garlic briefly in olive oil.
- Add tomatoes, salt, and basil. Stir to combine.
- Spray or grease a 12-inch pizza pan or baking sheet.
- Place the pizza crust on the pizza pan.
- Spread the tomato mixture over the top of the crust.
- Lay the chicken strips over the tomatoes.
- Top with Fontinella and mozzarella cheeses.
- Top with sliced mushrooms.
- Sprinkle Parmesan cheese on top.
- Bake at 450 degrees for 8 minutes, or until cheese is melted and the crust is piping hot.
